DESCRIPTION
This vinegar, which is made from the grapes of the Modena Region of Italy, has a history of about a thousand years. The word balsamico is derived from Latin (balsamum) and means medicinal. The must of Trebbiano grapes is boiled until it turns a dark color, and then it is kept in special wooden barrels for at least 12 years with rennet and gains its characteristic structure. White Balsamic Vinegar is made from Trebbiano grapes grown in the Modena region of Italy, white wine vinegar made with concentrated, uncooked grape must. White Balsamic vinegar has a mild, slightly sweet flavor with moderate acidity of about 5.2% to about 7.0% and lacks the rich caramelized flavor of traditional Balsamic. It works well in salad dressings and any sauce where red vinegar is not desired.
