To ensure the utmost quality and authenticity, they meticulously blend the three principal grape varieties: Sauvignon Blanc, Sémillon, and Muscadelle. Each grape is carefully selected, harvested plot by plot, sorted, and delicately pressed. Following this, there's a maceration period of 24 to 48 hours before the juice is transferred to separate stainless steel vats for fermentation at a low temperature.
